The original CHELMOS barrel aged feta cheese is made exclusively from pasteurized 100% Greek goat’s and sheep’s milk, salt, rennet and cheese culture. It ages traditionally for 6 months in wooden beech barrels, that have been used for many years due the excellent end product they offer. It is preserved in brine, as the recipe of this cheese type requires. Through the process of traditional maturing the CHELMOS barrel aged feta acquires a rich, peppery, creamy and slightly salty flavour while it has varied aromas and is of high nutritional value.
